Our Story — From One Hive to Honey One
One jar. One place. One beekeeper.
Honey One started with something very simple: one beehive, a curiosity about bees, and a fascination with the incredible work that goes into producing a single jar of honey.
What began as a hobby soon became something much bigger. Watching thousands of bees work together, collecting nectar from flowers and turning it into honey, completely changed the way I looked at something I'd previously taken for granted.
That first hive became more than just a hobby. It became a passion.
From One Hive to Many
Like most beekeepers, I soon discovered that one hive was never going to be enough.
As my knowledge and experience grew, so did the number of colonies I cared for. Each hive had its own personality, its own challenges, and its own rewards.
There was always something new to learn, from understanding the bees' behaviour to watching how the changing seasons and local flowers influenced the honey they produced.
Before long, I had more honey than we could enjoy at home, and I began sharing it with friends, neighbours and family.
Seeing people enjoy honey produced by bees I had personally cared for was incredibly rewarding.
That's when the idea for Honey One began to take shape.
A Little Inspiration From My Children
Honey One was never intended to be just another jar of honey on a supermarket shelf.
At home, my children were curious about the honey and the different flavours we could create.
They loved the idea of making something special from the honey our bees produced.
That curiosity inspired me to experiment with different combinations, bringing together the natural sweetness of honey with flavours such as pistachio, hazelnut, cacao, cinnamon and ginger.
Some were rich and nutty, others smooth, sweet or warming.
What started as a bit of family fun slowly became a collection of honey varieties, each with its own character.
And then there was one flavour that was entirely my idea.
A Childhood Love of Chilli
Growing up, chilli was almost always on our table.
It wasn't something reserved for special occasions. It was simply part of everyday food, and I developed a love for that unmistakable heat from an early age.
Even today, I enjoy adding chilli to all sorts of dishes.
So naturally, when I started experimenting with flavoured honey, I wanted to bring together two things I love: the sweetness of honey and the fiery warmth of chilli.
The result was our Hot Honey — a combination of sweetness and heat that brings something completely different to the table.
While my children inspired the sweeter flavours, the hot honey came from my own childhood memories.
It felt like a small piece of my past finding its way into something new.
Why Honey One Is Different
For me, honey has always been about more than what's inside the jar.
Behind every batch are hardworking bees, changing seasons, flowering plants and the care that goes into looking after a colony.
That's why Honey One is built around small-batch production, traceability and a genuine appreciation for beekeeping.
We're based in Cambridge, where our journey began with that very first hive.
We believe people should know more about where their honey comes from, who is behind it and the story that makes each batch special.
Rather than trying to become the biggest honey company, our ambition is to create something people can trust and genuinely enjoy.
Good Things Take Time
Honey production follows nature's timetable, not ours.
Bees need suitable weather, healthy colonies and flowering plants to produce a surplus of honey.
Some seasons are generous. Others are not.
That's part of what makes real beekeeping so fascinating.
Our availability can be limited, and some varieties may take longer to return.
But that's something we're happy to embrace.
We'd rather grow carefully and maintain our connection to the bees than rush the process.
From Our Hives to Yours
Today, Honey One continues to grow from that original idea: making beautiful honey, exploring interesting flavours, and sharing a little of our family's passion with others.
From traditional honey to our more adventurous creations, every jar represents another step in a journey that began with a single beehive.
And as long as the bees keep working, we'll keep finding new reasons to love what we do.
Thank you for being part of our story.
