Hazelnut Honey Banana Bread
A moist, tender banana bread sweetened with Honey One Hazelnut Honey and topped with a nutty honey glaze. The perfect way to use up overripe bananas — if it lasts long enough to matter.
Ingredients
- 3 very ripe bananas, mashed
- 100g unsalted butter, melted
- 100g light brown soft sugar
- 3 tbsp Honey One Hazelnut Honey, plus 2 tbsp for the glaze
- 2 medium eggs
- 1 tsp vanilla extract
- 225g self-raising flour
- 1 tsp bicarbonate of soda
- 75g roasted hazelnuts, chopped
Method
- Heat the oven to 160°C fan / 180°C conventional. Grease and line a 900g loaf tin.
- Whisk the mashed bananas with the melted butter, sugar, 3 tablespoons of Hazelnut Honey, eggs and vanilla.
- Fold in the flour, bicarbonate of soda, a pinch of salt and half the hazelnuts until just combined.
- Pour into the tin and bake for 50–55 minutes, until risen, golden and a skewer inserted into the centre comes out clean.
- Cool in the tin for 10 minutes, then turn out onto a wire rack.
- Warm the remaining Hazelnut Honey until loose, brush over the top of the warm loaf and scatter with the remaining hazelnuts.
